To make this elderberry gummies recipe, you'll first need to make elderberry syrup. Lucky for you, I have an easy elderberry syrup recipe you can use! Once you have made the elderberry syrup, the only other ingredient you'll need is gelatin.
The other thing you'll need is bear-shaped silicone molds. I highly recommend these super cute, large bear molds. I originally bought some that were way too tiny and hard to work with, so these are much easier to fill.
Most elderberry gummy recipes add boiling water to the elderberry and gelatin mixture, but I prefer not to dilute the elderberry syrup with water. Heating half of the syrup over low heat (but not to the point of boiling) accomplishes the same thing, while keeping the gummy bears (or as my friend Sarah calls them, "elderbearies") more concentrated and flavorful.

- Add ½ cup of cool elderberry syrup to a small saucepan and sprinkle with unflavored gelatin.

- Whisk quickly to dissolve gelatin, then heat over low heat for 2 to 3 minutes; do not boil.

- Whisk in the remaining ½ cup of cool elderberry syrup until incorporated. Place molds on a tray that can fit inside your fridge.

- Use an eye dropper to fill the bear molds with the elderberry mixture, then carefully transfer the tray to the fridge for one hour or until firm.
Pro Tip: When filling the molds, work quickly before the elderberry-gelatin mixture begins to thicken.

- Unmold gummies and store in an airtight container or a Ziploc bag in the refrigerator for up to 3 weeks. Take 1 to 2 daily to boost immunity.
