Add ½ cup of cool elderberry syrup to a small saucepan and sprinkle with unflavored gelatin. Whisk quickly to dissolve gelatin, then heat over low heat for 2 to 3 minutes; do not boil.
Whisk in the remaining ½ cup of cool elderberry syrup until incorporated. Place molds on a tray that can fit inside your fridge. Use an eye dropper to fill the bear molds with the elderberry mixture, then carefully transfer the tray to the fridge for one hour or until firm.
Unmold gummies and store in an airtight container or a Ziploc bag in the refrigerator for up to 3 weeks. Take 1 to 2 daily to boost immunity.

When filling the molds, work quickly before the elderberry-gelatin mixture begins to thicken.
I recommend using silicone bear trays to make elderberry gummies. They make it easy to pop gummies out cleanly and give them fun shapes kids love.
If your gummies turn out too soft, add a little more gelatin; if they’re too firm, use slightly less next time.
Keep gummies in the fridge in an airtight container, and enjoy them within 2–3 weeks for the best flavor and potency.
